Dark Chocolate Coconut Brownie

  • 5 Tbsp. vegetable oil
  • 6 Tbsp. virgin coconut oil
  • 1 1/4 c. sugar
  • 1 c. of Equal Exchange Organic Baking Cocoa
  • 1 pinch of salt
  • 1/2 tsp. vanilla extract
  • 2 large eggs
  • 1/2 c. all-purpose flour
  • 1/2 bar Equal Exchange Organic Ecuador Dark Chocolate (chopped)
  • 1/4 c. shredded coconut (for topping)

Preheat oven to 375 degrees. Place coconut oil into the microwave for 1 minute until melted. Add melted coconut oil with vegetable oil, vanilla, and eggs. Stir well.

In another bowl, mix sugar, flour, cocoa, salt, and flour. Stir together until fully blended. 

Take chocolate bar and chop into sizable portions.

Combine all ingredients and stir thoroughly.

Grease an 8x8 baking tin and pour batter evenly inside pan. Sprinkle with shredded coconut. Bake for 15 - 20 minutes.
