- 1/2 c. Fair Trade puffed quinoa
- 1/2 c. almond butter
- 3/4 c. Equal Exchange Congo Coffee Project coffee, finely ground
- 2 tsp. unsweetened coconut, toasted
- Fair Trade sugar
- Extra Congo Coffee Project coffee, finely ground
Mix first four ingredients and form into balls about 1 tsp. big each. Roll balls in 4:1 mixture of sugar and Congo Coffee. Refrigerate. Will make 48 delicious, crunchy bites if the cook doesn't eat some first!
