Congo Quinoa Bites

  • 1/2 c. Fair Trade puffed quinoa
  • 1/2 c. almond butter
  • 3/4 c. Equal Exchange Congo Coffee Project coffee, finely ground
  • 2 tsp. unsweetened coconut, toasted 
  • Fair Trade sugar
  • Extra Congo Coffee Project coffee, finely ground 



Mix first four ingredients and form into balls about 1 tsp. big each.  Roll balls in 4:1 mixture of sugar and Congo Coffee.  Refrigerate.  Will make 48 delicious, crunchy bites if the cook doesn't eat some first!
