- 1 mashed, super ripe Equal Exchange Organic Banana
- 2 eggs
- Equal Exchange Organic Extra Virgin Olive Oil for the pan
Mash banana with a fork. In another bowl whisk eggs. Add banana to eggs and mix together. Oil pan and set to low-medium heat. When the pan is hot, add 1/4 cup batter to the pan. Let the pancake set until the center bubbles, then flip.
Enjoy with berries and maple syrup.
To spice things up mix a dash of cinnamon and/or vanilla into the batter.
