Ingredients
- 3 c. thinly sliced Italian squash or zucchini
- ½ c. finely chopped onion
- 2 Tbsp. snipped parsley
- 1 clove finely chopped garlic
- 1¼ c. biscuit mix (Bisquick or another brand or make your own, see below)
- ½ c. grated Parmesan cheese
- ½ tsp. salt
- ½ tsp. seasoned salt
- ½ tsp. oregano
- ½ tsp. Za’atar Mix (optional)
- black pepper – a generous dash
- 4 eggs, slightly beaten
- ⅓ c. Equal Exchange Organic Extra Virgin Olive Oil
Directions
Heat the oven to 350 degrees. Grease the pan lightly, 13x9x2 or 9x9x2.
Combine squash/zucchini, onion, parsley, garlic in a large bowl.
Add biscuit mix, cheese, salt, seasoned salt, oregano, Za'atar Mix, and pepper to the bowl.
Add eggs and olive oil to the bowl.
Mix everything together and spread it evenly in the pan you have prepared. Put it in the oven and let it bake for 25-30 minutes (9x13x2) or maybe a little longer (9x9x2) or until a knife inserted in the center comes out clean.
When it cools, cut into pieces about 2”x1” or whatever size you like and proudly serve it!
Homemade Biscuit Mix
- 4 c. flour
- 1 tsp. salt
- 2 Tbsp. baking powder
- ½ c. powdered milk
- ½ c. vegetable shortening
Sift dry ingredients together; cut in Crisco.
