- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 Tbsp sugar
- 1 egg
- 1 1/2 cups buttermilk
- 1/2 tsp vanilla
- 2 Tbsp butter
- 1 bar Equal Exchange Organic Milk Chocolate
- Equal Exchange Organic Bananas
- maple syrup
In a small bowl, beat an egg and stir in buttermilk. In a second larger bowl, combine flour, sugar, baking powder, baking soda and salt. Create a well in the center of the dry ingredients and pour in buttermilk mixture. Stir just until combined and add vanilla. Batter will be lumpy. Melt butter in a skillet and add to batter. Chop chocolate bar into fine chunks, a variation of sizes keeps it exciting! Wipe excess butter from skillet and bring heat to a medium-low. Pour batter into pan by 1/4 cupfuls. Allow bubbles to form on top. This will take 2-3 minutes. When bubbles have formed, flip! Cook each flapjack a total of 4-6 minutes. Top with butter and syrup and sliced bananas and enjoy!
Makes 8 flapjacks.
Recipe doubles well.
